Rise of the Amaranth

"Rise of the Amaranth" is a cartoon illustrated for a research presentation on ruderals, a crop that can grow in desolate soil. Dr. Alan Sullivan of the University of Cincinnati Department of Anthropology, wanted to depict corn as an inferior crop to amaranth, a type of ruderal that his research indicated was a truer super-food.
